Orange Deliciousness

I wanted to finish up our dinner with something other than a cookie or popsicle tonight, but there wasn’t enough time to bake a cake. I decided to try a recipe I’d found a few years ago but never used, and man am I glad I did. It’s by Robin Miller and is as simple as it is delicious. Perfect for a summer evening with a hint of the fall to come.

Orange Dessert

Sherbet-Stuffed Oranges with Carmel-Pecan Sauce:

In a small saucepan, combine 3/4 cup store-bought carmel sauce and 1/4 cup chopped pecans. Set over medium heat, bring to a simmer, and let simmer for 5 minutes.

Meanwhile, cut 4 navel oranges in half. Using a spoon, remove the orange sections from the orange halves, leaving about 1/4 inch of flesh with the skin. Set the sections aside and spoon orange or rainbow sherbet into the orange halves.

Place the orange sections on a dessert plate and drizzle the carmel-pecan sauce on top. Set the orange cups with sherbet in them next to the sections and enjoy!
